The invention relates to poultry processing industry, and in particular to a method for separating wings from carcasses of a bird and a device for its implementation. The aim of the invention is to improve the quality of separation, as well as improving reliability. The method is as follows. First, an incomplete incision is made in the area of connection of the wings with the carcass of the bird in the direction from the back to the humerus of the carcass with cutting the tendons holding the humerus without damaging the bone. Then the wings are grasped and the carcass and wings are mutually stretched to separate the latter, and the stretching is carried out until the shoulder joint is removed, and then the connecting wings with the carcass of the muscle and the skin are cut in the stretched position. Figure 1 schematically shows the proposed device, a perspective view; figure 2 is the same side view (from the end of the loading of carcasses); in Fig.Z - cutout of the upper branches of the carrier; figure 4 is a device with a tool for cutting; figure 5 is the same side view (from the end of the loading of carcasses). The device comprises a transporting means 1 with load-bearing elements 2 for moving in its plane of symmetry carcasses mounted with their Cavity on these elements (in this case, the carcasses are placed with the breast bone upwards and the neck in the direction of movement of the transporting medium), as well as guides. symmetrically located along the transport means, which serve to capture the carcasses in the region of the shoulder joint of the wings, and a means for separating the wings from the carcasses, including cutting elements mounted symmetrically on the sides of the transport means 1. The cutting elements are plate knives 3. the side surfaces 4 of which are facing to the vehicle, and the cutting edges 5 are facing up with a lift in the direction of movement of the carcasses, while the blade knives are spring loaded and installed with the possibility of w controlled variation of the distance between them and the mutual angular position of their lateral surfaces. This is due to the fact that each knife is mounted on a console 6, forming a swing axis for the corresponding knife, which runs mainly parallel to the path of the supporting elements 2. Each console 6 is rotated around an axis 7 located vertically relative to it. Lamellar knives 3 are installed with the possibility of oscillatory motion, and their side surfaces in the initial position are parallel. The guides used to capture the carcasses in the area of the shoulder joint of the wings are made in the form of chain conveyors 8 with grippers 9 so that, as the carrier engages the carrier, the distance between them increases. Captures can be made in the form of controlled brackets. The conveyors are driven from the wheels 10. Each conveyor 9 extends with its upper branch 11 at a certain distance from the outer side of the corresponding blade knife 3 and mainly parallel to its side surface 4 and is driven together with the conveyor means 1. The upper branch 11 is raised by a support bar 12 in the middle zone tangential to the wheels 10 to form an inclined section 13, i.e. passes approximately at the height of the path of the wings 14 of the bird carcass. In the area of the raised upper branch 11 there is a deflecting bar 15 for distributing the grippers 9 from the vertical position imparted to them by the spring to the closed position. In addition, the device has a clamp 16 for pressing the processed bird carcass to the supporting elements 2. as well as a tool for cutting tendons, installed in front of the cutting elements. In this case, the tool for cutting tendons is formed of two circular knives 17 located at an acute angle obliquely to one another, symmetrically to the path of the conveying means and mounted with the possibility of their introduction into the region of the shoulder joints of the carcass. Each plate knife 3 has a guide 18 curved in the form of a runner. The apparatus operates as follows Obra 1 Zoom. This process can be optimized due to a slightly higher speed of conveyors in comparison with the speed of the supporting elements 2, which allows the capture 9 to catch on the wing. The contact occurs approximately until reaching the blade knives 3. at the same time, the grippers are distributed with the help of the deflecting bar 15 to the closure position covering the humerus. The cutting edges of the 5 knives 3 begin to separate the skin and ligaments in the area of the wing joint from the side of the mentioned bend, and then cut the tendon that controls the lifting of the wings 14. Then the final separation of the wings occurs, which occurs without cutting or cutting the bone. Thus, the proposed method and device allows for high-quality separation of the wings, while on the carcass there are no fragments of the tips of the joints, which helps to improve the quality of poultry products, the device is reliable in operation.

Claims (5) [1] Claim 1. A method of separating wings from carcasses of a bird, comprising making an incomplete cut in the area of connection of the wings with the carcass of a bird, grabbing the wings and mutually stretching the carcass and wings to separate the wings, characterized in that, in order to improve the quality of separation, an incomplete cut is carried out in the direction from the back to the humerus of the carcass with cutting of the tendons holding the humerus without damaging the bone, stretching is performed until the shoulder joint is removed, and then the wings connecting to the carcass of the muscle are cut and skin in a stretched position. A device for separating the wings from the carcasses of the bird, containing a conveyor with load-bearing elements for moving in its plane of symmetry carcasses, mounted with their cavity on these elements, guides symmetrically located along the conveyor for capturing carcasses in the shoulder joint of the wings and a means for separating wings from carcasses, including cutting elements mounted symmetrically on the sides of the conveying means, characterized in that, in order to increase reliability in operation e and improve the quality of separation of the wings, it is equipped with a tool for cutting tendons installed in front of the cutting elements, the latter being lamellar knives, the side surfaces of which are facing the transport vehicle, and the cutting edges are upward with a rise in the direction of movement of the carcasses, while plate knives are spring-loaded and mounted with the possibility of adjustable changes in the distance between them and the mutual angular position of their side surfaces, and the guides are made in the form of a chain s conveyors with grippers so that as the carrier is accompanied by the gripper, the distance between them increases. [3] 3. The device according to claim 2, characterized in that the blade knives are mounted with the possibility of oscillating motion, and their side surfaces are parallel in the initial position.
